My kids are granola lovers! They will eat it any time of the day, and they always think it's a treat. I love the fact that I can add so many different ingredients and it always provides a great balance of fat and protein. I've made this with dried fruit, but this recipe is the one that has my kids coming back for more and more:
Ingredients:
* 1 1/2 cups of old-fashioned oats
* 1 teaspoon cinnamon
* 1/4 cup almonds (I like the sliced almonds best)
* 1/4 cup pepitas
* 1/4 cup sunflower seeds
* 1/2 cup shredded coconut
* 2 tablespoons chia seed
* 1/4 cup honey
* 3 tablespoons salted butter, melted
* 1 tablespoon vanilla
Directions:
1. Preheat the oven to 250 degrees F.
2. In a large bowl, mix together all of the dry ingredients.
3. In a small bowl, melt the butter. Then, add in the honey and
vanilla, stirring until it is thoroughly mixed together.
4. Mix the wet ingredients into the dry ingredient bowl. Then,
spread the granola over parchment paper on a cookie sheet.
Press the granola together, flattening it down into a large
rectangle.
5. Bake for 50-55 minutes. The granola will be a light, golden
brown color. Let it cool and then break it apart into pieces.
* Store leftovers in an airtight container.
